The Holm Oak Cabernet Sauvignon 2023 is a beautifully complex wine, showcasing classic blackcurrant and cassis characters with a velvety mouthfeel.

Maturation in French oak has enhanced its aromatic profile and tannin structure, adding hints of chocolate, leather, and tobacco to the wine’s already rich flavour.

While drinking wonderfully now, this cool-climate Cabernet will continue to develop gracefully over the next 6–10 years, revealing even more depth and complexity with time.

Tasting Notes

Aroma: Blackcurrant and cassis with subtle hints of chocolate, leather, and tobacco.

Palate: Velvety mouthfeel with well-integrated tannins and complex layers of dark fruit, chocolate, and savoury notes.

Finish: Long, smooth, and richly textured with lingering fruit and spice.

Winemaking

The Holm Oak Cabernet Sauvignon 2023 was crafted from handpicked fruit, selected to achieve the perfect balance between ripe fruit flavours and the variety’s herbal notes.

The fruit was de-stemmed, crushed, and cold-soaked for 3 days to enhance extraction. Traditional Bordeaux yeast was used for fermentation, followed by gentle pressing to extract fine tannins. The wine was then aged in French oak barrels to add complexity and structure. After a light egg white fining, the wine was coarse filtered and bottled, resulting in a rich and structured Cabernet that will age beautifully over time.

About the Vineyard

Holm Oak is a labour of love for winemaker Bec Duffy and her husband Tim Duffy, viticulturalist. Since 2006 they have followed their dream of crafting delicious expressions of cool-climate Tasmanian wines.

One of Bec and Tim’s shared passions is to create things. They simply love to craft treasures from Mother Nature’s wonderland. They are creative winemakers, pushing boundaries and trying new techniques, but always remaining true to Tasmania’s highly regarded winemaking reputation.

Their complementary skills drive their vision to produce delicious wines that reflect their home, Tasmania’s pristine Tamar Valley, and their own personalities – honest, down to earth, genuine and authentic.

Tamar Valley

The Tamar Valley is Tasmania’s oldest wine region, located in Northern Tasmania and stretching from Launceston to the Bass Strait.

This region is renowned for its cool maritime climate and iron-rich soils, which provide ideal growing conditions for producing premium wines.

Home to over 30 family-owned wineries, the Tamar Valley accounts for more than a third of Tasmania’s total wine production. The region has a long history of viticulture, with its first commercial vineyard established in the mid-1800s at Windermere, and its cuttings even contributing to the early vineyards in South Australia.

Today, the Tamar Valley is celebrated for its Pinot Noir, Chardonnay, Riesling, and sparkling wines, all of which reflect the region’s exceptional terroir and winemaking heritage.
